Ruben Fiszel 690ee9dbb7 chore: bump vite to 8, svelte vite plugin to 7, svelte to latest

- vite: npm:rolldown-vite@7.3.0 → ^8.0.0-beta.15 (native Rolldown)
- @sveltejs/vite-plugin-svelte: ^6.2.1 → ^7.0.0
- svelte: ^5.38.0 → ^5.53.5
- @sveltejs/kit: ^2.49.2 → ^2.53.2
- vitest: ^4.0.10 → ^4.1.0-beta.4 (vite 8 support)
- Remove @rollup/rollup-linux-x64-gnu (Vite 8 uses Rolldown)
- Remove monaco-editor-wrapper from optimizeDeps.include (not installed)
- Add lang="ts" to DucklakeSettings.svelte instance script (Oxc parser)
- Add vite plugin to externalize windmill-client during dep scanning
